Our Craft

Today, Moré’s legacy and his love for Cuban bread continues to shine through our family’s fourth-generation owners and our award-winning, delicious Cuban bread recipe, made originally for the Cuban sandwich. We proudly hand-bake the traditional 36-inch loaf, as well as our popular 18-inch loaves, around the clock, churning out over 15,000 loaves of bread daily. Each and every loaf is formed out of the freshest, specially-blended ingredients and then baked directly on the hearths of the rotating ovens. A signature split down the middle is created with the century old tradition of placing a palmetto leaf down the middle.

Authentic Cuban Bread

Crusty on the outside, soft on the inside, our century-old authentic Cuban bread consists of high-gluten spring wheat flour created specifically for our bakery. It also contains a shortening with zero trans fat. It’s most commonly used for Cuban sandwiches, but many simply love it plain, warm and fresh.

Media Noche

Translated as "Midnight Bread," this hoagie-shaped bread is used mainly for Cuban sandwiches. We use real eggs to make it a little sweeter than our Cuban bread. This also creates a soft interior and yellowish coloring. Its unique flavor will turn the common turkey sandwich into a mouthwatering masterpiece.

Coca Hamburger Buns

The sweetest of all our breads, the Coca bun is made with sugar. It has a soft interior and tremendous flavor. These buns pair wonderfully with hamburgers, pork sandwiches or even eaten with butter as breakfast toast.

Honey Wheat

Our health conscious Honey Wheat bread substitutes honey for sugar, creating an outstanding flavor. Additionally, our Honey Wheat is made with 51% whole wheat flour to make it a healthy alternative to our regular Cuban bread. This item is perfect for schools, bistros, delis, hospitals, day care, or any retail outlets featuring healthy alternatives.

Delivered Fresh Daily (No Food Service Options): Hoagie rolls, Basket breads, Dinner rolls, Onion rolls, Hamburger buns, Kaiser rolls, Bucket breads. 

CUBAN BREAD RECIPE

(All measures are by weight except water)

1 qt. water (cool with ice)

1oz. salt

1 oz. sugar

2 oz. yeast dissolved in 1 cup of lukewarm water

3 ½  lbs, all-purpose flour

2 oz. shortening

INSTRUCTIONS:

Put water and ingredients in a large mixing bowl, mix at low speed for 4 min., then at high speed for 6 min. Place dough in a warm place (about 80 degrees F). Cover with a cloth, and let dough rise for 45 min.

Mold into 6 oz. balls, set in warm place and cover for 45 min.

Roll into small 6 in. loaves, dampen leaves and press them hard into top of loaves.

Place loaves leaf side down on board or cloth covered board. Space apart to allow for expansion, cover and let rise 45 min..

Place loaves on stone in a 400 degrees  F preheated oven, leaf side up. Bake for 20 to 30 min.

……according to taste.

 

Please note: Use dough hook on the mixer instead of beaters, because the dough is very stiff. Make loaves by using rolling pin, then roll like a cigar approximately 2in. wide.

Strips of other material maybe used in place of palm leaves. (rope, shoestring, strips of parchment paper etc.) palmetto preferred!!!!
